Ah, Keto Pancakes a Breakfast favorite!

Just recently we had Shane’s Dad here for a visit.   One of his favorite things to do is cook pancakes for the family in the morning. (What daughter-in-law doesn’t love that?)

I will attest that Dad is a master pancake maker.  They are always beautifully formed and cooked to perfection.   Dad even sings while he cooks  the world’s  best pancakes!

Keto Pancake with raspberries and whipped cream

We have been on our Keto diet for a while now.  We wondered if we could create a Keto friendly Pancake recipe.  We had heard others were having some success making Keto friendly flapjacks with Almond Flour and Coconut Flour. So we thought why not do a combination of the two.

Armed with these Keto friendly flours we unleashed Dad in the kitchen to concoct a beautiful new pancake recipe. Here was his results.

  • 1 Cup of Almond Flour
  • 1/4 Cup of Coconut Flour
  • 2 Packets of Stevia
  • 1 Tsp of Magic Baking Powder
  • 6 Eggs
  • 6 Tbsp of Whipping Cream
  • 1 Tsp of Vanilla extract
  • Pinch of Sea Salt
  • Slowly add up to 1/2 Cup of water to reach the desired batter consistency. Our family loves thin Pancakes
  1. ) Whisk all ingredients together in a bowl until smooth. (Batter should be the consistency of typical pancake batter. If it's too thick, add a little more water.)
  2. ) Preheat pan on the stove over medium-low to medium heat. Drop a tablespoon of coconut oil into the hot pan
  3. ) Next delicately drop batter into the oiled pan and form into 3" circles. Cook until bubbles start to form. Flip and cook until browned on the other side. Repeat with the rest of the batter.
