In my corner of the internet, I spend the majority of my time writing recipes that are designed for the lazy cook (cause I mean, I like cooking… but I like eating, drinking wine, and binging Netflix more…. you know?). Spoiler alert: I’ve been on Keto for a couple months now and my once severe eczema is almost completely healed!
Anyways, when the kind-hearted folks over here asked me if I would like to share a recipe with you beautiful people it’s safe to say that I was beyond excited.
But don’t worry guys, I totally played it cool…
Today we’ll be making my absolute favorite kind of dish! Which is literally any meal that requires the least amount of effort for the most amount of deliciousness. This is an Italian-inspired recipe that’s filled with flavors of rich sun-kissed tomatoes and bursts of garlic. The best part? It takes only 5 minutes of active prep for this healthy, filling, winner-winner chicken dinner!
Before we can get started though, we need to turn up the tunes. In my kitchen, I always listen to a catchy song on repeat (much to my family’s misery) and then proceed to do that awkward two-year-old dance (the kind where you just bounce up and down) the whole time I’m cooking.
So if you’re an avid music fan like me turn up “Roll To Me” by Del Amitri (or whatever you feel like listening to!), then get that slow cooker ready… set… go!
- 2 pounds of boneless chicken breast
- 12 oz of bruschetta choose your favorite! I opted for tomato basil
- 10 oz jar of kalamata olives drained and chopped (optional)
- 4 oz of feta cheese crumbled
- 3 cloves of garlic minced
- 2 tablespoons of balsamic vinegar
- 1/4 teaspoon of crushed red pepper flakes
- 1/4 teaspoon of Himalayan Pink Sel Gris, or Tuscan Sun Sea Salt
Combine all the ingredients together and toss in the slow cooker
Set that bad boy to cook on low for 6-8 hours
Then just walk away -just walk away
Later, come home to the delicious aroma of your hearty, home-cooked meal!
Serve with a fresh salad, then dish up because you're done!
