If you are like me, you are staring down the barrel of a new year… wondering where the year went and if you achieved any of last year’s resolutions. I know diet and exercise are on most people’s lists, as it is on mine as well. (Every bleeping year!)
I don’t have any hidden tricks or tips to getting a jump start on your New Year resolution accept maybe this… Make the resolution one day early. (cheesy, I know.) But, that is what I am going to do!
I have been hitting the carbs and the booze pretty hard this Holiday season, and it’s starting to take its toll. Today, I came home from work with an irritated stomach and a heavy stack of heartburn. Ugh, ok body I hear ya, let’s do this thing. Time to get back on Keto.
After dragging the remaining holiday cookies and sweets next door to my neighbour’s house, I rifled through my fridge to see what was left. I had a bunch of veggies I had bought for snacking on, through the holidays. But, low and behold they never made it out on the table because we had so many sugary treats lying around.
What I ended up with was pretty awesome!

Bonus …there was enough left over, that the hubby and I were able to take another full plate of food to work with us the next day. Not a bad way to kick start a New Year!
